It has to be delicious. That's true. But there's more to it.
The world is in constant evolution. We need to recognise and respect that,
without losing contact with our culture and heritage.
At the same time, we need to keep our eye on our primary task: ensuring guests enjoy everything we offer.
I’m also bringing a message: that enjoyment can exist. Better yet, that enjoyment must exist.
Even in the worst of times, you need to be able to stop for a moment. Need to be able to hold on
to a portion of happiness. A person must be able to be happy.
That is what hospitality means to me.
Back to the food. I call my kitchen ‘locally sourced, world inspired’. I focus on the richness that surrounds us,
without becoming singular. I don’t want to suppress my hunger for travel and other cultures, but encourage it.
The world is our oyster.
This is how I’ve come to a modern and carefully curated fusion.
A kitchen where taste and sustainability go hand in hand.
With vegetables as the linchpin in a seasonal play of flavours. Fish we allow to ripen.
Appreciation of shellfish and crustaceans. A nice piece of meat, but never too much.
More ingredients prepared at the moment, to conserve their pure taste.
We offer luxury, without focusing solely on luxury products.
We embrace new techniques, but honour the classic culinary foundation.
All these layers give The Jane a soul, a mission, a feeling for the world around us.
And still. In the end, it’s simple:
